Individual Chocolate Soufflé Cakes
I used to subscribe to the magazine Cooking Light. I didn’t make many of the recipes, but it was a great magazine when I first subscribed. The problem? Slowly, but surely, it became more of a women’s exercise magazine that happened to have a few recipes. Too bad. I now get Healthy Cooking and make A LOT of the recipes in it. It’s great.
Over the years I subscribed to Cooking Light, though, there were a few recipes that I keep coming back to. The Individual Chocolate Soufflé from April 2007 is one of them. They’re incredible! They aren’t hard to make; they’re reasonably healthy; they don’t require any special ingredients; they work up quickly, and they make the perfect partner to a fresh-pulled espresso.

Why do I blog on it now? That’s simple, the recipe is now online so I can share it with you!
It’s still under copyright so I don’t quite feel right re-posting the recipe, but a link is the next best thing, right?! Give them a try, you won’t regret it!
